This is the standard course for enjoying "Torimoto's Motsunabe", made with premium beef and offal from premium Japanese Black beef cows.
The volume is slightly small to standard.Additional orders can be made a la carte.
The restaurant serves Tokimitsu's motsunabe as its main dish, as well as fresh seasonal fish sashimi, such as the owner's speciality, sesame mackerel, and beef sashimi and charcoal-grilled cuts carefully selected based on the condition of the meat on that day.
The final dish of the hot pot is noodles, carefully selected for their texture and aroma, which are perfectly matched with Tokimitsu's soup, or rice porridge made with rice blended specially for Tokimitsu by Hachidaime Gibei, one of Kyoto's leading rice specialists.
To conclude the course, the owner will serve Tokimitsu's original Geisha blend, which he created after much trial and error and tasting, working with Onioi, a key figure in the Kyoto coffee world and a close friend of his, to determine the blend ratio, roasting degree of each bean, and extraction temperature.
